| Dear Steve, We feel, water of good quality to drink straight, is you good water for home brewing. We drink filtered tap water, so we brew with filtered tap water. Some people recommend using distilled water, but we found this water expensive(compared to filtered tap), and tastes 'different'. Like flat. So we stick with water we are familiar with.
